If you need a quick breakfast that is the perfect balance of protein, veggies and carbohydrate…then these Turkey Bacon, Quinoa, Spinach Egg muffins are a MUST add to your meal prep days!
They are super easy to make and my youngest daughter enjoys helping me make these every week! Here’s the recipe!
Turkey Bacon, Quinoa, Spinach & Egg Muffins (serves 4…3 muffins each)
4 cups fresh spinach
1/4 c. chopped green onions (I’ve also subbed out regular onions and it was just as tasty)
8 sliced cooked turkey bacon, chopped
2 cups cooked Quinoa
1T plus 1tsp Olive Oil
Other seasonings to taste. (I added a few shakes of the Mrs Dash Tomato basil seasoning but anything you like without tons of sodium will work too) I really want to try the Flavor God seasonings!! In any case…lets get to the directions!!
Preheat oven to 375 degrees.
Heat olive oil in skillet and cook spinach just until wilted. Combine spinach and all remaining ingredients into mixing bowl and stir well making sure to really combine the egg throughout the mixture. So now here’s where it gets interesting…I HIGHLY recommend these silicon baking cups that I found on Amazon or even a silicone muffin baking pan. I tried making these by just spraying the muffin cups and they stuck like CRAZY!
In any case, spray your muffins cups with non stick spray then divide the mixture into the 12 baking cups equally! Bake for 20 minutes.
Remove from oven and Enjoy! (or put 3 muffins in a container for a quick grab and go meal)
For my Fix friends for one serving which is 3 muffins… its 1 RED, 1 GREEN, 1 YELLOW, 1 tsp!
