Southwestern Veggie Tacos are the bomb

If I had to pick a favorite meal from this 21 day Reset and cleanse we are doing…this one might be my absolute favorite!  I mean, there are several that I enjoy, but this one is probably the easiest to prepare and is perfect for Taco Tuesday…or any day really! Yesterdays was especially good for some reason! I’ve even made these for friends and they raved about them!  So trust me when I say, they are really good!  You won’t even miss the meat.  But if you’re dying to have some protein with your meal and you’re not following the 21 day reset, then you could easily cut up some pre-cooked chicken and throw it into the rice and beans mixture!  Now for the recipe.  Its actually a two part recipe because the Black Beans and Rice is a separate dish on this cleanse.  But you can simply throw in the corn as you’re making the black bean and rice recipe and you’d be good to go!

This was our Day 2 dinner! So yummy!

Black Beans and Rice

Ingredients
¾ cup cooked brown rice (I cooked mine in my Instant Pot)
½ cup canned low-sodium black beans
¼ tsp. extra-virgin olive oil
⅛ tsp. ground chili powder
1 pinch ground cumin
¼ tsp. ground coriander
1 tsp. Bragg® Liquid Aminos
Himalayan salt (to taste)

Directions
While rice is cooking, heat beans gently in saucepan until very hot. Drain (do NOT rinse) and return to pan. Add olive oil, spices, Bragg Liquid Aminos, and Himalayan salt. Stir well. Gently fold beans into cooked rice.

Guacamole
¼ medium avocado, mashed
2 Tbsp. fresh salsa (pico de gallo is best) Garlic Powder to taste (or you can grab the guacamole recipe I have HERE)

Now to put it all together with the corn and tortillas!!

Southwestern Veggie Tacos

1¼ cup Black Beans and Rice (see recipe above)
¼ cup cooked corn kernels (froze or canned)
2 corn tortillas (I cut mine up and then threw them in the air fryer so we could have “chips” but you could definitely just warm the tortillas and make actual tacos!
Directions
Combine mashed avocado, garlic powder and fresh salsa in small bowl; mix well, Set aside.
Combine Black Beans and Rice with corn and mix well!  (corn can also be added to the beans and rice when you are making the beans and rice, especially if you are using frozen corn.
Serve with guacamole and extra pico de gallo…as pictured!

This recipe is for one serving.  What I generally do is double or triple the recipe so that we have enough for at least the hubby and I and then have leftovers for the next day!  Hope you enjoy this meal as much as we do!!  Please let me know if you try it!!
