Carrot Cake Loaf for 80 Day Obsession or 21 Day Fix

Who doesn’t love Carrot Cake…when I saw someone in our official coach test group share a version of this recipe I knew I needed to try them out.

My hubby is a huge fan of Carrot Cake and since he’s doing this program with me I might be able to keep in the game longer with something that resembled one of his favorites!  I tweaked some seasonings and quadruped the batch so I could make 4 at a time.

WARNING: If you’re looking for a dessert type recipe…this is NOT for you!  This recipe is designed to fit specific portion requirements for the portion approach container system!

So here goes:

Preheat oven to 375 degree

1 10 OZ bag of shredded carrots (or 4 cups)

1 C quick cooking oats

8 eggs

2 tsp natural vanilla flavoring

1T + 1 tsp cinnamon

1 T Baking Powder

1/2 tsp nutmeg

1/2 tsp allspice

1/2 tsp cloves

Combine all dry ingredients and mix well.  Add eggs to a bowl and stir together with vanilla.  Then add the dry ingredients to eggs with the shredded carrots.  Stir well.

(at this point you COULD add extras to your loaves but they would need to be accounted for in your meal plan.  For example, for my husbands batch, I add 1 1/2  mashed banana + pineapple and pecans to his batter which would add a Purple and Blue container to each of his portions)  I don’t add to mine because I don’t have that combination on my regular meal plan!)

Divide the batter amongst 4 small loaf pans OR 12 individual muffin cups that have been sprayed with non stick spray.

Cook for approximately 20-30 min until the top of the loaf (or muffin) is firm to the touch.

1 loaf (or 3 muffins) is one serving!

SERVING TIP:  I experimented with adding different approved sweeteners to the mix and nothing really made a big difference!  So what I do now is when I am ready to eat one, I will cut the loaf in half lengthwise, heat it in the microwave, take 1 tsp of nut butter and spread it as best I can across it so I get some in each bit, (its really not that much but just enough to give it flavor) then I will drizzle 1/2 tsp of pure maple syrup (approved by the trainer of the program) over the top!  It is a very dense bread like cake but has great flavor! My daughter likes it with some butter and syrup…like pancakes…which is fine with me because they are way healthier than basic buttermilk pancakes!!

When you add the tsp of nut butter makes the container count a Red, Yellow, Green, Tsp!
