This recipe for Zucchini Cashew soup from the Ultimate Reset is my FAVORITE soup of all time! Seriously so good!! Its a recipe from a 21 day cleanse we do just about every year called The Ultimate Reset. When my husband did it the first time he lost 23 lbs in 21 days. Simply incredible! Anyway, here’s the recipe!
What you’ll need:
- 8 med size zucchini, cut into chunks and steamed
- 1 cup raw cashews
- Water or Vegetable broth
- Salt and Herbal seasoning or fresh herbs to taste
Directions:
Soak cashews in enough water to cover for 30 min to an 1 hour; drain.
While cashews are soaking, wash and chop zucchini into chunks then steam until soft. (I use a little metal veggie basket and steam on the stove top but feel free to use whatever method works for you!)
Combine cashews, zucchini, salt and seasonings in blender and mix until smooth, adding water or vegetable broth as needed for desired consistency. I always taste it to see if it need more seasoning or salt.
Pour into saucepan and reheat gently, but do not over boil. (I don’t always do this step because its seriously so good I just want to eat it right away! Its also not bad served cold in the summer! Super easy!!
